It was here that Chef Song learned to design and prepare custom dishes that would delight individual guests and cater for a wide range of highly-valued clientele. ![]() The majority of these high-spend customers were from China, Hong Kong, Malaysia, Singapore and Indonesia. In 1999, Chef Song was invited by Chef Hui to join him in Las Vegas and work at The Mansion – an invitation-only property managed by and adjacent to the MGM Grand Hotel and Casino. Six years spent travelling throughout China broadened his knowledge of traditional dishes, and took him to Hong Kong where he worked alongside world renowned Chef Pui Wing Hui – who to this day is still the most decorated and awarded Chef in Hong Kong. Chef Song has more than 30 years’ experience working with and perfecting Asian cuisine.
